Serves 4

4 slices bacon

2 Vidalia onions, sliced thinly

2 red onions, sliced thinly

2 yellow onions, sliced thinly

4 tablespoons olive oil or unsalted butter

1 tablespoon chickpea flour

4 cups low-salt beef broth

¼ cup dry red wine

1 tablespoon thyme

1 tablespoon Worcestershire

Salt and pepper to taste

4 eggs

¼ cup chopped fresh parsley

1. Fry the bacon until crisp and drain on paper towels; when cool, crumble.

2. Sauté the onions in the olive oil, stir in the flour, and cook for a few minutes, stirring to get rid of the lumps. Add the broth, wine, thyme, and Worcestershire sauce. Cover and simmer over low heat for 1 hour.

3. Just before serving, raise the heat, taste for salt and pepper. Swirl the soup and add the eggs, one at a time. Remove the eggs after 1 minute. Ladle soup and 1 egg each into four warm bowls and garnish with chopped parsley.
